A reliable set of measuring tools
Baking is a little less forgiving than cooking. Using handfuls as a unit of measurement might work for a stew, but when you’re baking a cake, accurate measurements make a difference.
A set of measuring cups and spoons is a must-have for measuring the right amounts of ingredients such as flour, sugar, cocoa powder and spices. For even greater accuracy, especially when making bread and more technical recipes, consider investing in a digital kitchen scale.

Mixing bowls for every occasion
For baked goods that bowl everyone over, you can never have too many mixing bowls. A good set gives you different sizes for everything from whisking eggs to combining dry ingredients or preparing cake batter.
Look for stacking bowls that are sturdy, easy to clean and comfortable to handle. Stainless steel, glass and durable plastic are all useful options, depending on your preferences. Practicality is important – choose bowls that have pouring spouts, are dishwasher-safe, and include measurements.
Having several bowls also means you can keep your wet and dry ingredients separate until you’re ready to incorporate them, and will save you having to frantically clean bowls midway through a recipe.

A good hand mixer or stand mixer
Want to save your arms from a serious workout? Then a mixer is your new best friend.
A hand mixer is a versatile option for everyday baking and takes up relatively little cupboard space – worth considering if you have a small kitchen. If you bake regularly or like making bread, meringues and larger batches of baked goods, a stand mixer can be a worthwhile investment.

Baking trays and cake tins
Your oven can only work with what you put in it, so make sure you have the right bakeware for the job.
Versatile essentials include a baking sheet, muffin tray, loaf tin and round cake tins. If you enjoy experimenting, you can always expand your collection with specialty cake tins and bakeware.
Non-stick options make it easier to remove your creations (and save time on cleaning), while sturdy metal bakeware tends to heat evenly and is suitable for a wide range of recipes.
A silicone spatula
Never underestimate the humble spatula. A flexible silicone spatula is perfect for scraping every last bit of cake batter from your mixing bowl, folding ingredients together and spreading icing. It’s also particularly handy for working with melted chocolate and other sticky ingredients. After all, life is definitely too short not to lick the spoon (or spatula) – especially when chocolate is involved.

A whisk
Even if you have an electric mixer, a good whisk is one of those simple tools you’ll reach for more often than you might expect. A balloon whisk in particular is a useful all-rounder, whether you’re combining dry ingredients, beating eggs, mixing sauces or adding air to batter.

A rolling pin
If biscuits, pastry, pies or homemade pizza are your thing, a rolling pin is essential.
Traditional wooden rolling pins are a popular choice, although silicone and other modern designs can be easier to clean. The important thing is choosing one that feels comfortable in your hands and gives you good control – because nobody wants pastry that’s too thick on one side and paper-thin on the other.

Cooling racks
Freshly baked goodies smell amazing, but try and resist the temptation to immediately pile them onto a plate (eating them while they’re warm is totally fine, though).
A cooling rack lets air circulate around your baked goods, helping them cool properly and preventing soggy bottoms. They’re especially useful for cookies, cupcakes, cakes and bread. Cooling racks also make icing and decorating easier once your everything has cooled down.

A little preparation can save you a lot of scrubbing – and that has to be good news, right? Baking paper is useful for lining trays and cake tins, while reusable silicone baking mats provide a convenient non-stick surface for cookies, pastries and other treats.

An oven thermometer can help you check the actual temperature inside your oven, making it easier to achieve consistent results.
