Ingredients
- 6 tomatoes, halved
- 4 cloves of garlic
- 4 sprigs of fresh thyme leaves
- 2 sprigs of fresh rosemary, chopped
- Olive oil, to drizzle
- 1 medium sized onion
- 500ml vegetable stock
- 1 cup double cream
- Salt and pepper to taste
- 8 slices sourdough/ rye bread
- 3 cups cheddar cheese, grated
- 125g mozzarella, grated

Cooking Instructions (Tomato soup)
- Pre-heat the oven to 200℃
- Place the tomatoes, garlic, thyme, and rosemary in an oven tray and drizzle over the olive oil.
- Season with salt and pepper and any preferred spices.
- Roast for 20-30 minutes then remove from the oven.
- While waiting, saute the onion in some butter until soft and translucent.
- Add the roasted tomatoes and stock then allow to simmer for 10 minutes.
- Puree the soup then pour in the cream and season to taste.
Cooking Instructions (Grilled cheese)
- Heat a large, non-stick frying pan.
- Mix together the mozzarella and cheddar and distribute evenly between the slices of buttered bread.
- Sandwich the bread together and fry in the hot pan until golden on both sides and the cheese is melted.
- Season with salt and pepper to taste.
- Serve with the hot soup, the ultimate winter comfort meal!
